Sometimes, and only sometimes, you stumble across a most fantastic pasta recipe that makes you wonder where it's been all your life.Baked Pasta With Mozzarella
8 ounces pasta
1 tsp olive oil
2 garlic cloves, minced
28 ounce can whole peeled tomatoes
1/4 tsp crushed red pepper
1/4 tsp dried oregano
1/8 tsp granulated sugar
salt to taste
2 cooked chicken sausages, cut crosswise in 1/4 inch thick rounds
8 ounces mozzarella cheese, cubed
1 ounce fresh grated Parmesan cheese
Preheat oven to 400. In a large pot of boiling salted water, add pasta and cook according to package directions. Drain and set aside.
Meanwhile, in a large saucepan, heat oil over medium. Stir in garlic and cook until fragrant, about 1 minute. Add tomatoes, crushed red pepper, oregano and sugar. Bring to a boil, reduce to a simmer and cook, stirring to break up tomatoes, until slightly thickened, about 5 to 8 minutes. Remove from heat and season to taste with salt.
Stir pasta, sausage and half the mozzarella into the sauce. Scoop the mixture into a baking dish coated with non stick spray. Scatter remaining mozzarella on top and sprinkle with Parmesan. Place in the oven and bake until bubbly and the top is lightly golden, about 10 to 15 minutes. Let cool slightly before serving.
Makes about 4 servings.
